Summer Supper Solutions

Two tasty recipes that are perfect for warm weather, and nutritious to boot.

GAZPACHO

INGREDIENTS:

1 cup tomato juice

1 tomato, seeded and finely chopped (diced)

½ cucumber, finely chopped

½ red pepper, finely chopped

½ green pepper, finely chopped

½ onion, finely chopped

2 tablespoons cilantro, finely chopped

2 tablespoons parsley, finely chopped

½ lemon (fresh juice)

½ tablespoon green onions (scallions), finely chopped

½ jalapenos, seeded and finely chopped

1 clove garlic, finely chopped

salt and pepper to taste

PREPARATION:

Puree ½ cup tomato juice, half the tomatoes, half the red pepper, half the chopped cucumber and half the green pepper.

Place the puree in a glass container. Add remaining tomatoes, cucumbers, and peppers (red and green). Add onion, cilantro, parsley, lemon juice and green onions (scallions).

Liquefy one cup of the above combination with the other half-cup of tomato juice and diced tomato.

Combine the two mixtures together. Season with salt and pepper.

Cover the container and put it in the refrigerator for 2 hours before serving.

You can decorate with cucumber strips or with an olive.

Serves 4 to 6

SANDWICH "VIVA ITALIA"

INGREDIENTS:

OLIVE DRESSING:

½ cup pitted black olives

½ cup pitted green olives

1 tablespoon capers

⅓ cup artichoke hearts

⅓ cup roasted red pepper

2 tablespoons of parsley

3 cloves garlic, minced

2 tablespoons lemon juice (about 2 lemons)

2 tablespoons extra virgin olive oil

salt and pepper to taste

SANDWICH:

1 loaf focaccia (or a bread round that's 7" in diameter)

¼ pound of salami

¼ pound smoked turkey or ham (Black Forest)

¼ pound sliced Provolone cheese

PREPARATION:

Put all of the ingredients for the dressing in a food processor and mix to a smooth paste.

Halve the bread horizontally and spread olive paste on the two sides. Close and wrap with plastic wrap and set aside for at least 30 minutes before serving so the bread absorbs the flavor of the olive paste.

Before serving, layer the sandwich with salami, ham and cheese.

Cut into slices and serve at once.
